Walk-In Cooler Not Holding Temperature: What to Check Before It Becomes a Food-Safety Call
A walk-in that runs constantly but can't hold temperature is mid-failure, not "acting up." The likely causes in checking order, what it costs to wait, and the data signals that move first.
A walk-in that reads 44°F when it should read 38°F, and stays there while the compressor runs flat out, is not having a bad day. It is losing a fight, and the direction only goes one way. The useful question is which fight it's losing, because the causes range from a two-minute fix to a compressor on its way out.
Check these first (no tools, ten minutes)
- The door. A gasket with a visible tear, a door that needs a shoulder to close, strip curtains pinned back since the lunch delivery. Warm kitchen air is the single most common load a walk-in can't keep up with. Stand inside with the lights off and look for daylight around the door frame.
- What just went in. A full cart of hot prep loaded straight into the box adds hours of pull-down work. If the temperature climbed right after a big load and recovers by evening, the box may be fine.
- The evaporator. Open the door and look up. Visible ice on the coil means the real story is the defrost cycle, not the temperature. Our walk-in icing guide covers that path.
- The condenser. If the condensing unit sits in a back room or on the roof, check that the coil isn't caked in dust and grease and that nothing is stacked against it.
The mechanical causes (contractor territory)
Roughly in order of what techs find:
- Dirty condenser coil. The system can't reject heat, pressures climb, capacity drops. The box holds at night and loses ground during the day.
- Low refrigerant charge. A slow leak means the coil never gets cold enough. Shows up as a box that gradually needs more running hours for the same result, over weeks.
- Evaporator fan problems. The coil is cold but the air isn't moving. Often audible (a fan that isn't running) or visible (uneven frost).
- Failing compressor. Longer running, less cooling, more current. The stages are covered in our compressor guide; a walk-in that drifts warm is often stage 4.
- The box itself. Degraded door heaters, failed insulation panels, or a box now asked to do more than it was sized for.
What it costs if you wait
The number on the thermometer is a food-safety number. Above 41°F for long enough, everything in the box becomes a judgment call, and health inspectors don't grade on effort. The bill for a walk-in failure is rarely the repair: it's the repair plus a bin full of stock plus the scramble, at whatever rate the emergency happens to bill at. A walk-in limping through a summer week is also running the highest-wear duty its compressor will ever see, which is how a coil-cleaning problem becomes a four-figure replacement.
What the data shows before the thermometer moves
The thermometer is the last instrument to know. Before the box fails to hold temperature, a monitored walk-in shows:
- Runtime creeping up. The box holds setpoint but works longer hours every day to do it.
- Recovery time stretching. After a delivery or a defrost, pull-down takes visibly longer each week.
- The daily pattern shifting. A healthy box loses ground during the rush and wins it back fast. A struggling box wins it back slower each day, until one day it doesn't.
- Current draw rising at the compressor for the same conditions.
By the time the average temperature is wrong, the cheap-fix window has usually closed. The average is the last number to move.
What to do now
Today: run the ten-minute checks, and write down the box temperature at the same three times each day. That log is the poor man's monitoring, and it's the first thing a good tech will ask for. If the temperature is above 41°F and not recovering: that's a service call today and a stock decision now, not a wait-and-see.
